Freeze-drying is different from conventional drying methods that rely primarily on heat.

During the freeze-drying process, food is first frozen. Then, under carefully controlled conditions and reduced pressure, the frozen water within the food is removed through a process called sublimation, meaning the ice transitions directly into vapor without first becoming liquid.

The result is food with most of its moisture removed while maintaining much of the character of the original ingredients.

It's also what gives freeze-dried foods their distinctive light, crisp texture.
